| LE MARCHE - TYPICAL DISHES
Another interesting aspect of Marche is that for each change of landscape a new culinary tradition exists. As one gradually moves away from the coast and approaches the mountains, the smell of fresh Adriatic fish is replaced by the typical flavours of the hinterland.
There are lots of "dishes" to try and to enjoy: "Vincisgrassi" (local lasagne), Olive ascolane (fried olives stuffed with meat), "Ciauscolo" (local sausage garlic flavoured), "Pecorino cheese", "Caciotta di Urbino" (seasoned cheese), "Prosciutto di Carpegna", "Salame di Fabriano", "Maccheroni di Campofilone", white truffles, extra virgin olive oil and, of course, the "Brodetto" (local "bouillabaisse" with at least six different kinds of fresh Adriatic fish).

LE MARCHE - WINE
The Marche has 11 DOC (controlled denomination of origin) wines, one for each hill: Rosso Conero, Rosso Piceno, Rosso Piceno Superiore, Colli Maceratesi, Vernaccia di Serrapetrona, Falerio, Bianchello del Metauro, Colli Pesaresi, Verdicchio dei Castelli di Jesi, Verdicchio di Matelica, Lacrima di Morrovalle, Lacrima di Morro d'Alba, Esino.
You can buy these excellent wines in any good supermarket at very convenient price (around 5/10 euro each bottle). Restaurants where to enjoy the genuine local cuisine are also quite cheap. Your hostess will give you some good suggestions.
